1st course

Pumpkin Soup

with carrots, olive oil, vegetable stock, fresh grated ginger, cinnamon, sea salt and black pepper

What’s great about it:

Pumpkin and carrots are a great source of carotenoid antioxidants that are anti-inflammatory and help to support a healthy immune system. Pumpkin seeds are high in minerals including magnesium, manganese, copper, iron and zinc.  Zinc is responsible for a healthy immune function by helping with the growth and development of white blood cells. Pumpkin seeds are also high in the amino acid tryptophan that helps to make serotonin – the FEEL GOOD hormone responsible for feelings of wellbeing. Additions to this soup such as ginger and turmeric boost anti-inflammatory properties that can help nourish a healthy immune system.

 

2nd course:

Whole grain pasta

with homemade pesto, sunflower seeds, rocket salad, sea salt and black pepper

What’s great about it:

Whole grain pasta is loaded with vitamins and minerals and containing two to three times as much fibre as refined-wheat pasta. 1/4-cup serving of our homemade pesto contains 15% of the daily value for vitamin A, 6% for vitamin C, 20% for calcium and 4% for iron, based on a 2,000-calorie diet. Vitamin A supports vision health, vitamin C acts as an antioxidant and tissue builder, iron supports healthy red blood cells and calcium is essential to strong bones. You also get about 6 g of protein per serving of pesto. The basil-based pesto also contains a number of flavonoids, compounds that support cell structure and help fight disease-causing free radicals. Sunflower seeds have a high amount of protein and moderate amount of fibre. Each of these nutrients creates a full feeling in the stomach when consumed.

Rocket salad is very low in calories and is high in vitamins A and C. It also contains fibre and sulfuraphane, a substance known to have potent anticancer properties. This substance is found in all cruciferous vegetables, and is a potent stimulator of natural detoxifying enzymes in the body, and research has shown it to have anticancer, anti-diabetic, and antimicrobial properties.

Other nutrients in rocket include vitamins B, K, folic acid, iron, calcium and magnesium. These vitamins and minerals are particularly useful for preserving bone health.
